use up your leftover broccoli for a delicious pesto, perfect for pasta, potatoes or as a tasty spread on a sandwich.
Ingredients
1/4 of a broccoli
2 cloves of garlic
5g nuts (usually pine but use what you have)
1 tbsp parmesan/ nutritional yeast
1/2 a lemon juiced
1 tbsp oil
herbs (optional)
How to make
there isn't too much to this recipe at all, firstly you want to boil the broccoli so it is soft.
while that is boiling, peel the skin off the garlic and add to a food processor along with the other ingredients.
once the broccoli is done add that along with some salt and pepper to the food processor as well and blitz the ingredients together.
finito, your all done!
